Floating Island

Floating Island Is a Classic French Food. It is one of the the famous French desert poached with custard and topped with caramel.

Ingredients


For Meringues -

  • 2 Egg Whites
  • 150 gm of Icing Sugar
  • 1 Lemon

For Caramel Topping -

  • 100 gm of Icing Sugar
  • 1/2 Cup Nuts & Almonds

For The Custard -

  • 1/2 Litre Milk
  • 2 tbsp Custard Powder
  • 100 gm of Icing Sugar
  • 5 Egg Yolks

Method -

To Make Custard -


  • Heat 500 ml of Milk In a Saucepan. When It comes to boil take off from heat.
  • In a large bowl whisk the Icing sugar, Egg Yolks and Custard Powder. When It mix properly then pour the hot milk Into the bowl over the Egg Mixture slowly and keep whisking It.
  • Now return the Custard on the medium flame In a Saucepan and keep whisking until you get the mixture thickens. Remove It from flame and Refrigerate It to serve with the Island.

To Make Meringues - 


  • In a bowl add 2 tbsp of Egg White, Icing Sugar and Squeeze Lemon and whisk It until It forms a thick and hard shiny paste.
  • Take 2 Tbsp full of Meringues Paste and dip It In hot water for 30 seconds , so that we get the exact shape which floats on the Custard. And keep them aside.

To Make Caramel Topping -

  • Put the Pan on the Flame and bring Icing Sugar and Almond along with little bit of water. Shake It occasionally so as to melt the Sugar. Remove from Flame and Let It get cooled.

Final Step - 

  • Pour the Custard Into Plates/Shallow Plates . Slowly Place the Meringues/Island by shifting them from the Spoon to the Custard. Garnish It with Caramel toppings and Almonds. 
  • Your Floating Island Recipe Is ready to serve as a desert.

Winter's Special - Easy Chicken Soup



For chilly winter. Chicken soup Is one of the most comforting food which keeps you warm and hydrated. Its simple and light and takes few minutes of Preparation . Its healthy and nutritious . Just follow the simple Steps. 

Ingredients

  • 1 Chicken Stock Cube
  • 3/4 Pieces of Chicken (Neck and Wings)
  • 1 small piece of Ginger
  • 1 tsp Wheat flour
  • Salt for taste
  • 5 Garlic Pods
  • 2 tbsp Oil
  • 1 Onion (med size)
  • 1/2 tbsp masala milk powder
  • 2 tbs of Milk
  • 1 tbsp Jeera(Cumin Seeds)
  • Coriander for garnish

HOW TO MAKE CHICKEN SOUP :

  • Take a bowl. Add chicken Pieces, 2 pods of garlic, Ginger, 1/2 tsp salt and bring It to boil.
  • Then take a vessel and put It on on a medium flame. Add Oil, 3 pods of garlic(sliced), Jeera and stir It till It gets golden brown.
  • Add Wheat flour and stir It well.
  • Now strain the boiled water and keep the chicken Pieces aside and Shred the Chicken Pieces.

  • Add this water to the vessel and let all the Ingredients cook together.
  • Add 1/2 tsp of Masala milk powder to mixture and One Chicken stock Cube for flavor. When done with this. Then add Milk and stir It continuously.
  • Now at last add the shredded chicken and stir the mixture properly.
  • Serve Hot and garnish It with Coriander leaves.

Steamed & Fried Veg Momos



One of my reader has requested this recipe. So today we are going to make Momos at home. 
I'he tried to make both (Steamed & Fried) as per your choice with Its hot Red Sauce.

Ingredients

For Dough -

  • 1 Cup Maida (All Purpose Flour)
  • Salt for taste
  • Water for making dough

For Filling -

  • 1 Cup Mushroom(Sliced)
  • 2 Onions (Finely Chooped)
  • 1 Cup Cabbage (Chopped)
  • 1 tbsp Ginger garlic Paste
  • 1/2 tsp Pepper
  • 1 tsp Salt
  • 1 tbsp Oil
  • Ajinomoto (Optional)
  • 1/2 Slices Capsicum 
  • 1 tbsp Soya Sauce

Spicy Red Dippy for Momos -

  • 4 Small Cherry Tomatoes
  • 3 Red Chillies
  • 1 tsp Garlic (Chopped)
  • 1 tsp Ginger (Chopped)
  • 1 tsp Oil
How to make Steamed & Fried Momos -

  • Take flour and salt Into a bowl. Pour some water and make the dough Soft as possible.
  • Chop down all the vegetables and keep them aside

  • Now take a pan, Pour some oil and fry Ginger and Garlic paste In Oil.
  • Add all the vegetables to the pan and stir them occasionally until the vegetables are tender. 

  • Season the mixture with Soya sauce , Ajinomoto, Pepper & Salt and mix It properly. Cook for 3-5 minutes then keep It aside In a bowl to let It cool for filling.

  • divide the dough Into equal parts for steamed and fried momos as well. 
  • Take one ball and spread It thinly with the help of some all purpose flour. 
  • Take a spoon full of filling and keep It on the flat dough. 
  • Fold It in half and twist all the edges and continue sealing until you get the desired shape.
  • See your momos are ready for Steaming or Frying.
  • For making Steamed momos, Apply oil by finger on sides of momos and put them on Idli stand and allow It to steam In a Cooker for 5-7 mins until steamed well.
  • For Making the Fried ones, Heat Oil In the deep frying Pan, Drop momos 2 or 3 at a time and fry them until they are golden brown. Drain them on Tissue paper.

  • Momos are served with hot and Spicy chutney. take a frying pan and pour 1 tsp of Oil. Fry Garlic, Red Chillies and Tomatoes all together. Add salt for taste. Remove the pan from the heat and grind all the fried Ingredients to form a Paste. Your Dipping Is ready to serve with Steamed and Fried Momos. 
Serve these hot Momos with the hot and spicy dipping.

Khaman Dhokla

Traditional Gujrati Khaman Dhokla

Preparation Time - 2 - 2.5 hour

Cooking Time 25 - 30 Minutes

Serves - 4

Ingredients for Dhokla - 

  • 2 Cup Besan (Gram Flour)
  • Salt to taste
  • 1 tbsp Lemon Juice
  • 2 tbsp Oil
  • 1/2 Cup Yogurt (Beaten)
  • 3 - 4 Green chilli Slit 
  • 1 tsp Soda bicarbonate
  • 1 tsp Mustard Seeds
  • 1/2 Cup of Coconut Scraped
  • 1 tbsp Sugar
  • 1/2 tsp Turmeric Powder
  • 1/2 tsp Ginger & Green Chilli Paste
  • 2 tbsp Coriander leaves (Chopped)

How to Prepare Dhokla -

  • Take a bowl, Add Besan and Yogurt. Then add 1 cup of Luke warm water and stir It with a whisk. Make sure lumps are not formed. Add salt to It & stir continuously. 

  • Leave the mixture aside for 2 - 3 hours for fragmentation. After fragmentation of mixture add green chilli & ginger paste and turmeric powder and mix It.
  • Now you can put the steamer on flame or you can use cooker as well. ( For cooker put a mold Into cooker and then put the thali on It for steaming). Grease the thali or baking Tin with little bit of oil.
  • Now take a small bowl add soda bicarbonate, lemon juice, 1 tsp of Oil & mix It . Now add it to the batter & mix It using whisk. After mixing pour the batter Into the thali and place It on steamer or Into cooker.

  • Cover the steamer with a lid for 10 mins . when It gets cooled, take It out of steamer.

Directions for Tampering -

  • Now heat remaining oil In a pan. half cut green chilli, mustard seeds and cook them until they crackle. remove the pan from heat.

  • Now take 1/3 cup of water and add sugar and mix this syrup In the pan. Pour the whole tampering material of pan onto the dhoklas and cut dhokla Into square pieces. and put It on serving plate.

  • At last garnish them with coconut scraped & chopped coriander leaves.

Kadai Paneer (Restaurant Style)

One of the top favorite dish of Indians In Restaurant style 

Preparation Time - 20 Minutes

Cooking Time - 25 to 30 Minutes

Serves - 4

Ingredients -

  • 500 gm Paneer (Cottage Cheese)
  • 3 tbsp Oil
  • 1 small size Capsicum
  • 2 Dried Red Chilies 
  • 2 tbsp Coriander seeds(crushed)
  • 1 tsp Coriander Powder
  • 2 tsp Garlic Paste
  • 2 tsp Ginger Paste
  • 5-6 Tomatoes (Chopped)
  • 1 Medium Onion (Sliced)
  • 2 Cloves
  • 2 Bay Leaf
  • Salt to Taste
  • 2 Piece Cinnamon 
  • 1 tsp Red Chilli Powder 
How to prepare kadai Paneer-





  • Take Kadai and pour Oil In It. Put flame on medium. Add cinnamon, crushed coriander seeds, bay leaves & red dried chillies broken Into two parts. Fry It for half a minute.
  • Add Onions and paste of ginger & garlic to the kadai and Cook It till the mixture gets golden brown In color.

  • Add Chopped tomatoes & Capsicum,  Red chilli powder & Coriander powder. And Cook It on high flame for 5 minutes

  • Now add Paneer( 1 Inch Cubes & Triangles) , Salt and half Cup of water to the mixture.
  • Cook It for 5 Minutes on low flame and cover the kadai with a lid. Now at last garnish the hot kadai paneer with coriander leaves and serve It with Naan or  Rotis.

Egg Curry


Total Time -  35 Minutes
Preparation Time - 15 Minutes
Cooking Time - 20 Minutes

Ingredients -

  • 8 Boiled Eggs
  • 2 Onions Chopped
  • 1 tbsp Ginger (grated)
  • 1 tbsp Oil
  • 3 tomatoes Chopped
  • 2 tsp tomato paste
  • 3 tbsp Coriander Powder
  • 3 tsp Cumin Powder
  • 1/2 tbsp salt
  • 2 tsp garam masala
  • 3 tomatoes (chopped)
  • 2 tsp cumin powder
  • 1/2 tsp chilli powder
  • 1 tsp turmeric powder
  • 1/2 Cup water

Directions - 
  • In a small bowl, mix all the spices like cumin, salt, coriander, turmeric, chilli powder.
  • Now take a large frying pan and pour Oil In It. Toss all the onions till they become golden brown. Mix ginger and garlic along with Onions.
  • Mix all the the spices with the veggies. And stir It continuously. 
  • Add tomato paste ad tomato and stir It.Add water & allow to simmer the mixture to 10-15 min uncovered and stir It to become thick
  • Gently add the eggs and garam masala to the curry.
  • Allow the eggs to heat on medium flame and serve them Immediately with Chapatis or Naans, Or Jeera Rice.

Christmas Special - Chocolate Fudge Cake

One of the favorite Dish On the Christmas Eve. Its Delicious & Yummy

Preparation Time - 30 Minutes
Serves - 12 to 15
Ingredients For The Cake - 

  • Butter 2 sticks
  • 5 tbsp Cocoa powder
  • 2 Eggs
  • 2 Cup sugar
  • 1 Cup water
  • 2 Cups of all purpose flour
  • 1/2 Cup of buttermilk
  • 1 tsp vanilla powder
  • 1 tsp baking powder
  • Almonds, Cashew, Nuts(Hand full)
Preparation for the Fudge Cake -
  • Take a large bowl , mix sugar & flour Into It. Then put a medium size saucepan on a medium flame and mix cocoa, water and butter. 
  • Boil the mixture well and pour It on the sugar/flour mixture. Mix It well and add baking soda, buttermilk, eggs and vanilla.
  • Now pour It Into a 10*12 pan , apply some butter at the bottom and sides of the pan, & bake It for 30 Minutes at 350 degree C temp.
Preparation for the Fudge Icing-
  • Take a medium saucepan, combine cocoa, butter & milk. Bring the mixture to boil. 
  • Remove from flame and add crushed/powdered sugar and stir It well until the whole sugar melts and mixture becomes smooth.
      
                                 
  • While stirring add some vanilla and dry fruits and then pour It over cake.
  • Serve It chilled after refrigerating with love. :)
